Birthday Party FUN!

Last night, Sip turned 6, and we celebrated 
by throwing a birthday party!
Guests enjoyed a special menu that featured popular small plates, wines,
and our birthday breeze martini, all for only $6.
 
 
The party started at 4:00pm and lasted well into the night.
 
 
Everyone loved the customized ice sculpture and the chance to win fun raffle prizes!
 
 
 
And it just would not have been a birthday without a delectable cake!
 

Our General Manager, Avery, brought out the birthday cake and presented it to Lane, our owner,
& his wife Jamie, as the staff & the guests sang Happy Birthday to Sip!
 

After the candles were blown out & the wishes were made, our guests were treated to a slice of the
AMAZING lemon cake with fresh fruit, specially made by our pastry chef.
 

We celebrate and thank all of our guests that have been with us over the years
and we look forward to many more years of 
Great food, 
Great wine, 
Great friends
to Sip with!

London Calling!

Yes, The Games Have Begun!

London kicked off the 2012 Summer Olympics in style Friday night,
showcasing pageantry, national pride, lifelong dreams, & competitive ideals.


Sip celebrated the athletes & the evening in our own style,
 with Olympic inspired food & drink....& a whole lot of fun!

Executive Chef Christopher Brown, himself born in the UK, 
added to the fun & cooked up some traditional British Bangers & Mash & Fish & Chips,
and our pastry chef added the sweet touch of an English Trifle.

Guests also enjoyed Pimms Cup Cocktails from the bar - so refreshing - & so British!                                  
The atmosphere was electric, especially when local gold-medal-winning Olympian Wendy Boglioli 
stopped by for the festivities, sharing her Olympic stories & medals with our guests.
      

The thrill of victory & the agony of defeat...

Q. What is your favorite food at Sip?
A.  The Sweet Roll Sliders because they are amazing & I would eat them everyday ... just don't tell my wife

Q. What do you do when you're not working?
A. Hiking with my dog, working on my garden, maintaining an active presence in the wine industry, & preparing for the arrival of my son or daughter. I'm getting really good at rubbing my pregnant wife's sore feet, making ice cream runs to the store, or reading reviews for car seats and baby toys

Q. What is a fun fact that most people don't know about you?
A. I was a very accomplished artist for the majority of my life & have aspirations to reclaim that talent in the near future

Q. If you could have any super power what would it be?
A. To fly!  I know that is generic & over rated, but I love to explore & would love to see much more of the world than I already have.  Plus, the ability to fly would save a ton of cash on airline tickets!

Q. What are the top 3 reasons why you loving working at Sip?
A.  I love people & the ability to serve.  I am enjoying meeting new people & sharing experiences with them.  Sip feels like home to me & I want to pass that feeling on to our guests.  BONUS: Wine is COOL!

Q.  What is your favorite food at Sip?
A. The Jidori Chicken. All natural California Jidori, stuffed with parmesan cheese & black truffles, pan seared & then oven roasted, served with garlic mashed potatoes, asparagus (or other seasonal vegetable), white truffle oil, & house made burre blanc sauce.  I eat a lot of chicken, but I can never prepare it like Sip does it.  It is hands down the best chicken dish I've ever had, & one of the best entrees out there

Q. What do you do when you’re not working?
A. Whilst away from Sip, I  go out with friends, have quality time with the lady, exercise vigorously, cook, read, watch movies & sports, & sing in a band called Entwine By Design

Q. What is a fun fact that most people don’t know about you?
A. I can scream really loud

Q.  If you could have any super power, what would it be?
A.  Incredible strength, invincibility, flight, immortality... why stop at one?


Q. What are the top 3 reasons why you loving working at Sip?
A. 1) The guests and guest relationships 2) The in-house and office staff 3) Customer service. Great customer service is a dying art that I appreciate, practice, & believe in wholeheartedly.  Anyone can serve food.  Creating an experience that lasts forever - now that is incredibly special!

A. My halibut entree, because it's bomb, but really, the creamed leeks are awesome

Q. What do you do when you're not working?
A. I like to ride my new Scott road bicycle & I plan on riding Seattle To Portland next year

Q. What is a fun fact that most people don't know about you?
A.  I have traveled to 12 different countries & I have lived in 5 of those

Q. If you could have any super power, what would it be?
A.  So many cool powers out there! Mental Projection (ability to project one's
consciousness/psyche/emotions into the astral plane, into another, or to make them real)

Q. What are the top 3 reasons why you love working at Sip?
A. Working with wine, working in a family environment, & the freedom to be creative

Q. What is your favorite food at Sip?
A. The filet with ricotta polenta & ancho demi glaze.  Each component is great by itself but what really makes the dish is that together they make the perfect flavor combination.  You get a little spice from the ancho demi, the tenderness of the filet, & the light, fluffy, & delicate polenta - it all melts in your mouth!

Q. What do you do when you're not working?
A. I love almost all sports.  If I'm not attending a sporting event or watching one on TV, I'm usually relaxing with friends & family & enjoying a family style meal

Q. What is a fun fact that most people don't know about you?
A. I spent two years learning to cook under the guidance of chefs in Sonoma county, & I was once a server assistant right here at Sip!


Q. If you could have any super power, what would it be?
A. I wish I could fly. I could travel whenever I wanted & never have to deal with traffic or a busy airport!

Q. What are the top 3 reasons why you love working at Sip?
A. I really enjoy working at Sip because of the people I have the opportunity to work with; it's like a second family.  I also really love the fact that Chef Christopher allows me the freedom to be creative with my culinary skills. He & I work very well together, which isn't always easy to find in this business. The third reason I love working at Sip is the location. I was raised here in Issaquah & have lived here for the majority of my life. It's really nice to be part of a local business & close to my roots

A. The Jumbo Tigers!  They literally have every food I LOVE in one dish!  Prawns ... Crab...  Mango...Edamame...Butter ...Yum!

Q. What do you do when you're not working?
A. I enjoy foodie adventures with friends & I love movies

Q. What is a fun fact that most people don't know about you?
A. My full name has 11 "A"s in it

Q. If you could have any super power, what would it be?
A. Super speed running ability so I could go anywhere in the world - mostly for the food - & never be late!

Q. What are the top 3 reasons why you love working at Sip?
A. Wine, food, & great people - both the guests & my co-workers!

OK, so Avery, Adam, Chris, Jordan, & Kamaile are not famous;
more importanlty, however, they are filled with passion about what they do. 
They look for opportunities to help others & exceed expectations.   
It is their enthusiasm, committment, knowledge, & expertise that allow them to share their love of great food, great wine & great service with all of our great guests.

Seven Summer Sips



The Top 7 Wines of Summer
According to Sip Sommelier, Avery Genge

Now that summer is officially here, our Sip Sommelier & General Manager Avery Genge has compiled a list of the best wines to sip in the sunshine.  But before we dive into Avery's sensational summer selections, here is some information about our wine master himself.

Born and raised in San Diego, Genge moved to Washington in 1989, & went on to study geology at Central Washington University. Avery caught the wine bug 5 years ago, when his wife shared her love of wine with him. Not only did Avery enjoy drinking various wines, he also wanted to know every detail about what he was drinking.  He soon began strudying wines, became an official wine maker in 2009, and a Certified Sommelier in 2010.

Sommelier is the French classification for a trained wine professional.  The Sommelier has a vast knowledge of wine, can recommend wines to enjoy on their own or paired with food, & is in charge of all proper wine serving rituals in a restaurant. We are fortunate to have Avery's expertise, knowledge, & experience in the restaurant.  Ask him any time about any wine & he will have a recommendation that is sure to please!

Genge has taken the Certified Specalist of Wine (CSW) exam and is currently preparing for the intense Advanced Sommelier exam.  Recognized by the international wine and spirits industry, these exams test the candidate's knowledge of wine and the key elements within the worlds of wine production and viticulture.


Avery works closely with many local Washington wineries & is dialed in with their winemakers.  His latest wine making project is a third vintage for Bainbridge Cellars, major label to be determined, which will draw August 1st.

So what does a sommelier reach for when he wants a glass of wine?  Avery has many favorites, but his current go-to is Ugni Blanc, (an old Italian varital you may recognize as a Trebbiano), from France. He also favors the Thomas "La Crele" Sancerre, a specific style of sauvignon blanc, just as much.

While deciding which wine to sip on this summer, Genge suggests looking at wines that pair well with a broad selection of foods. He also suggests to “Look at wines that express themselves cold or warming, as it's not always easy to keep wine cold in the summer.  And don't be afraid to explore the world that is Riesling, or to branch out and experiment with some obscure varietals, like Torrontes, Gruner Veltliner, Ugni Blanc, Trebbiano, Rousanne, and Chablis."

1. Efeste, Riesling 2010
Columbia Valley, Washington
This Riesling has an unbelievable sense of balance, opening up with white peach, honeysuckle and a beautiful lift from deeper mineral/slate notes. It passes across the palate with wonderful acidity and texture, finishing with a lovely attack of granny smith apple, mandarin orange, and persimmon.

2. Lenz Moser, Gruner Veltliner 2011
Austria
This classic Gruner is light and fruity with lovely spice overtones.  This expressive, fresh, and fun white is uncomplicated and great for any occasion.

3. Chehalem, Pinot Gris  2012
Willamette Valley, Oregon
A very floral,  fruity, and pleasantly rich Gris! This wine has flashy gardenia and jasmine flowers upfront, with pink grapefruit, lychee, pineapple, and fresh peach in its fruit-basket. The palate is pretty and mouth-filling, with layers of sweet fruit, slate, tangy acid and an amazing breadth and length that linger after the wine is gone.

4. Fidelitas, Semillon 2010
Columbia Valley, Washington
The 2010 Fidelitas Semillon is an excellent example of the vintage, with bright acidity and loads of fresh fruit. The nose provides lemon, yellow apple and white flowers. All of these are confirmed on the palate with the addition of lemon zest, honey and hints of herbal tones set within a creamy, lingering palate. A versatile pairing wine, this summer white goes especially well with seafood and citrusy white meat or light fair.

5. Thomas & Fils, Sancerre 2010
La Crele, France
A rich Sauvignon bouquet and crisp gooseberry fruit on the palate.  This wine is ripe, focused and pure, with a long wet stone-tinged finish.

6. Hudson Shah, Viognier 2008
Columbia Valley, Washington
This Viognier is full bodied and aromatic, and exhales apricot, peach, pear, almond, violets and is round on the palate. This delicate and elegant white is fantastic sunny summer day patio white.

7. NV Roederer Estate, Brut Rose
Anderson Valley, California
The Roederer Estate Brut Rosé [a fun 'almost' white] is full and round with smooth flavors and fine persistent bubbles. The extra measure of Chardonnay contributes elegance and austerity, which balance nicely with the delicate fruitiness of the Pinot Noir.

No Need to Fear- Gluten Free is Here!

Sip has taken into consideration our many guests who are watching their gluten intake. Millions of Americans suffer from celiac disease by definition, and the more people are learning about the negative health effects of a high-gluten diet, the more they are choosing  to eliminate gluten from their diet. The number of Americans who eat gluten-free, whether by medical necessity or by choice, is roughly between 15 and 20 million. To find out more about celiac disease, click here.


According to a National Restaurant Survey, people are becomimg more interested in what's on their plate, and in making health conscious, nutritional choices. With this in mind, our Executive Chef Christopher Brown has created a menu that offers locally sourced, gluten free options; in fact, 60% of his menu is gluten free. These dishes offer fresh & distinct flavors, and have quickly become some of our guest favorites.

with creamed leeks, watercress and fennel

with brown butter cauliflower puree, snow peas, caramelized onions and haricot verts

New York Style Steak and Frites
with house made green peppercorn steak sauce
